Gluten Free: Blueberry Muffins

How are you and how are you spending this difficult period? I am on a business-to-home relationship and just spending time in the kitchen takes me to another, better world. It doesn’t always have to be some complicated recipe, or hours of cooking. Sometimes it’s enough to make something as simple as these muffins. Considering that recipe short, I won’t go on too long with the introduction either.

  • 2 eggs
  • 120 ml of milk
  • 50 ml of oil
  • 1/2 teaspoon vanilla extract
  • 180 g Schar Mix B flour
  • 1 teaspoon baking powder
  • 100 g of sugar
  • 100 g blueberries

Beat the eggs in a bowl with a whisk. Add milk, oil and vanilla extract and mix to combine. Add the flour mixed with the baking powder and sugar and mix briefly, just enough for the ingredients to come together, then stir in the blueberries. Line a muffin tin with paper baskets and place the mixture in them, filling up to 3/4 full. I dropped 10 muffins. Bake for 20 minutes in an oven preheated to 180 ° c. Check with a toothpick if they are baked. Remove the muffins from the mold and allow to cool on the racks.
