Muffins with orange and cranberries

To break through a series of savory recipes on the blog, I made muffins. I haven’t done them in a long time, and they’re just simple and versatile. This time I gave them a winter flair, as a kind of farewell to winter, and they can be combined with other fruits.

  • 2 eggs
  • 70 ml of honey
  • 60 ml of oil
  • 175 ml of milk
  • 1 orange (juice and zest)
  • 1 teaspoon vanilla extract
  • 230 g Schar Mix B flour
  • 2 teaspoons baking powder
  • 100 g of dried cranberries
  • orange filling for filling or some other spread

Beat the eggs in a bowl. Add honey, oil, milk, vanilla extract and orange juice and zest. Put flour mixed with baking powder in a mixing bowl. Add the mixture of wet ingredients and cranberries and stir briefly to combine the ingredients. Arrange the mixture in muffin baskets (amount for 12 muffins) and add a teaspoon of orange jam in the middle if desired. Bake for 15 – 20 minutes in an oven preheated to 200°C until the muffins get a nice color. Check with a toothpick if it is baked. Sprinkle with powdered sugar if desired.
