What’s for dessert ?: Gluten free: Paleo bread for breakfast

I’ve been thinking a lot lately about sugar … about how addicted I am to sugar … and how to get rid of that addiction. I tried it recently … I’ve completely eliminated sugar from my life. On the third day without sugar, I felt bad in the morning – listless, weak and with a headache, wandering around the office. It wasn’t clear to me why I felt that way, and then it dawned on me – that’s because I didn’t eat sugar !! I immediately went to the store for chocolate and cola and in a short time I came to my senses and the symptoms disappeared.

This time I decided to be smarter and throw out the sugar gradually. Anyway, I didn’t want to give up delicious meals, especially breakfast, so I found it recipe for paleo bread. The recipe is simple, and the different combination of nuts and dried fruit gives this bread a different taste.

  • 2 ripe bananas

  • 2 large eggs

  • 50 g coconut oil (melted)

  • 200 g almonds (grind 2 times and sift)

  • 1 teaspoon baking powder

  • a pinch of salt

  • 2 tablespoons flax seeds

  • 400 ml of chopped nuts (I used walnuts, hazelnuts, almonds and cashews)

  • 400 ml coarsely chopped dried fruit (I used figs, cranberries, raisins and dates)

Crush the bananas well with a fork. In a mixing bowl, beat the eggs with a whisk. Add the bananas and melted coconut oil and mix everything well. Stir in ground almonds, baking powder and salt. Add the nuts, dried fruit and flax and mix until the mixture is combined. Pour the mixture into a bread pan lined with baking paper. Bake for 35-45 minutes in an oven preheated to 170 ° C (check with a toothpick if it is baked). Leave the bread in the mold for 10 minutes, then take it out of the mold and cool on the rack. You can cut the cooled bread into slices and freeze.
