What’s for dessert ?: Gluten Free: Salty Waffles
My love for sweets is already known waffles, and today I reveal to you a salty combination. As with the sweets, you can upgrade the basic recipe to your own taste. Some of the suggestions are today’s combination of Greek yogurt, baked cherry pumidora and crispy slices of bacon that served us for lunch. For breakfast, I suggest putting an egg or poached egg on the waffles and adding bacon or avocado. You can also add spinach to the mixture and make green waffles, and the pizza flavor is on my mind.
- 2 eggs
- 360 ml of milk
- 60 ml of oil
- 220 g Bakin ‘bread flour mix or 170 g Schar mix B flour
- 2 teaspoons baking powder
- spices as desired (chives, oregano, paprika, Italian spice mix)
- 120 g grated cheddar cheese
- 6 slices of bacon
Fry the bacon slices in a pan without adding fat and cut into pieces. Beat the eggs in a bowl. Add milk, oil and spices. Add a little salt if necessary (I didn’t, because the bacon and cheese are salty enough). Add flour and baking powder and finally cheese and bacon. Let the mixture stand for 15 minutes, during which time heat the waffle maker. Bake the waffles according to the manufacturer’s instructions. Serve salted waffles as desired. I served them with Greek yogurt (maybe cream cheese and sour cream), toasted slices of bacon and baked cherry pumidore – I baked them for about 15 minutes at 200°C, and previously slightly salted, drizzled with olive oil and added garlic.
