What’s for dessert ?: Tiramisu with raspberries

What is your summer dessert number 1? To me, these are desserts served in a glass, previously well chilled. Such desserts are great for summer gatherings, and you can even take them on a picnic or barbecue in nature. Adjust the fruit combination to your taste, and I opted for raspberries (apart from being summer fruit) for another reason. I became Malinca ambassador. Malinca is a brand of healthy food and natural cosmetics whose products I have been using for some time, and this way I will get to know them even better and present them to you through my recipes.

This recipe is actually a precedent on my blog, as I didn’t use white sugar, but erythritol, a natural sweetener that looks and tastes similar to sugar, and their main difference is that erythritol has no calories. The amount of ingredients is enough for 4 glasses.

  • 200 g raspberries + 1 tablespoon erythritol (or 1 tablespoon white sugar)
  • 3 egg yolks
  • 4 tablespoons erythritol (or 3 tablespoons white sugar)
  • 250 g mascarpone
  • 200 ml of sweet cream
  • 8 biscuits + 10 tablespoons milk

Prepare raspberry sauce by boiling 100 g of raspberries with the addition of erythritol and passing through a thick sieve to remove the stones. Allow to cool. In a refractory bowl, mix the egg yolks and erythritol and cook on a steamer, stirring constantly for 5-10 minutes, until the egg yolks thicken and lighten (make sure that the bowl containing the egg yolks does not touch the water). Allow to cool. Mix the sweet cream into the whipped cream and set aside 50 g for decoration. Add the remaining whipped cream and mascarpone to the chilled egg yolks and mix until the mixture is combined.

Prepare 4 cups for serving dessert. Cut the biscuits into smaller pieces and soak briefly in the milk. Alternately put a row of biscuits, cream with mascarpone, raspberry sauce and a few fresh raspberries in the glasses. then again biscuits, mascarpone cream, raspberry sauce and fresh raspberries. Finish with mascarpone cream. Decorate with whipped cream and fresh raspberries. Refrigerate for a minimum of 3-4 hours.
